Our Sangiovese grapes are sourced from our friends the Chalmers family vineyard in Colbinabbin, Heathcote. We use around 40% whole bunches in our Sangiovese ferments and use indigenous yeast. We mature the wine in seasoned oak barrels for around 8 months before bottling. Flavours of cherry and red currants with notes of earthy tobacco and spice.
Shiraz 2018 Heathcote
The grapes for this Shiraz were gathered from vineyards in Tooborac and Metcalfe in Heathcote. Hand picked and fermented with wild yeast and 15% whole bunches. The wine spent 18 months in oak including a small portion of new American Oak barrels.
Pinot Noir 2018 Macedon
The grapes for this Macedon Pinot Noir were gathered from the HG vineyard in Pipers Creek. The wine was destemmed and hand plunged and fermented in small open vats and aged in French oak barrels for 16 months. 13.5% Alc
